Search on google for free DVD Ripper, then rip them onto your hard drive in mpeg-4 formats. Once that is done, they can be added to your itunes as mpeg movies. However, this will only copy the movie itself… You won’t get all the menus and such. As far as I know, it isn’t possible to rip an entire dvd and put it on your ipod, while keeping all the menus and bonus features.
Btw, dont rip to Avi format, because ipods dont recognize it. They only recognize mpeg-4 and the new ipod format, although i forget what it’s called. Er, find a step by step guide to convert ipod format:

I recommend that you use HandBrake to rip the DVD’s. Handbrake is freeware and it works for both mac and windows, It will recognize the different titles and you can choose which title you want to rip.
But if it’s copy protected, then you can use DVD Decrypter or DVD Shrink to remove the copy protection and after that you can use HandBrake to convert the dvd to mp4, avi or any other format.
